I highly recommend Sweet Fritsy. Her shop is unfortunately not open at the moment- reopens on the 11th- but she is always selling lots of cookies, candies, fudge, donuts, muffins, cupcakes, etc. I've ordered truffles from her and they were delicious.
i'm not sure how much i'd trust etsy... i've come across a lot of "vegan" sellers who don't really understand what vegan means, so i'd make sure to find a seller you really trust.
what annoys me most about the german version of etsy is that when you search for 'vegan' you get 30 pages of goat and honey soap. (and stuff from wool)
I've never ordered food on etsy before, but I've had great experiences with ordering other vegan merchandise there (a shirt with a broken cage and a free bird that says "vegan for life" is my favorite piece!). I've bought a few vegan products from Etsy - my favorite being a roll-on patchouli perfume. Wonderful!
I've ordered seitan from vegan foodsellers before. I'm way too lazy to make it myself (and the times I've tried to make it from a boxed mix haven't turned out too well) and spice it appropriately. Usually I get vegan 'hot wings' from this one seller and they were amaaaaaazing! So good! Last time I looked I couldn't find that seller, but I ordered some from http://www.etsy.com/shop/Medusafoods and they looked delicious, so we'll see. Her site isn't up right now since she has been sick, though.

You're right about some vegan sellers. I bought some vegan lip balm a few years ago and the first ingredient was beeswax. I was PISSED!!
