So at work a little while ago we started this bring treats into work on Fridays thing. We rotate who brings in the treats every week and you bring enough for everyone. Usually I cannot eat them, which is fine I really don't need more sweets :) There is one person who tries to make things I can eat also which is nice, and another who keeps asking me how to veganize her recipes so I can eat them as well. Well the first week I volunteered and made chocolate chip cookies because I found an amazing recipe just prior. So everyone LOVED them and had all kinds of questions on how to cook without eggs and such (nice questions as they were actually curious - no one else in my office, at least in my department, is even vegetarian) so I was telling them things you could use and answering their questions about veganism. And word got out that there were vegan cookies in accounting so people from other departments came to try them out - they were all skeptical like I don't know about this, but then they tried them and were like wow - these are the best chocolate chip cookies I've ever had!
So then it has been awhile and no one had signed up for last week so I did since I found an amazing brownie recipe that actually turns out like brownies should - eewey gooey (not super oily or cakey)! So I brought them in last Friday and again people loved them! There is one girl who never partakes in the sweets as she is very strict about limiting them, but she tried a crumb (because crumbs don't count....). Then every time I looked up she was taking more and more brownie! They must have been good if she was eating so much of them! And everyone was like 'can you send me the recipe. These are so good!' So yey! And then at the end of the day the girl who doesn't eat sweets said "You should cook vegan food for us every day. Turn us all vegan" :) Slowly but surely I am winning over my co-worker with vegan treats!
I'm not sure where I got either of them (I copy them over to my recipe index and am not very good at adding where I get the recipes from.....sorry!)
Brownies:
2 cups flour (I use enriched and whole wheat)
1 cup water
1 cup brown sugar
1 cup sugar
1 teaspoon salt
1 teaspoon vanilla extract
3/4 cup baking cocoa
1/2 cup oil - preferably vegetable oil
1/2 teaspoon baking powder
1/2 cup chopped nuts (optional)
1/2 cup vegan chocolate chips (optional)
Directions:
1. Boil water and 1/2 cup of the flour over low heat, stirring constantly, until it reaches the consistency of a thin gluey paste. Remove from heat and let cool completely. (I didn't let it cool completely - I just mixed it in when I got to that point)
2. Mix vegan sugar, salt, vanilla, cocoa and oil. Then add the rest flour-water mixture. Mix well.
3. Add the remaining 1 1/2 cups of flour, baking powder and the nuts or chocolate chips, if you choose to add those.
4. Spread mixture into a greased 11 x 7 pan. Bake at 350 for 25 minutes, or until a knife can be inserted and come out clean.
Cookies:
2 cups flour (I used whole wheat and enriched)
1 teaspoon baking soda
1 cup vegan margarine, softened (2 sticks)
1/3 cup light brown sugar
1/4 cup granulated sugar
1 package (3.4 oz) vegan instant vanilla pudding mix
Egg replacer for 2 eggs (I used 2 Tb Cornstarch and 4 Tb water mixed together)
2 cups semisweet chocolate chips
1 cup chopped walnuts (optional)
directions:
Preheat oven to 350 degrees. Sift together flour & baking soda.
In a large bowl, cream together the vegan margarine, brown sugar, and white sugar. Beat in the instant pudding mix, egg replacer, & vanilla until well blended. Blend in the flour mixture. Fold in chocolate chips & nuts.
Using a spoon, pull about 2 tsp of dough & make a ball with your hands, then place on prepared cookie sheet. Lightly press down blobs with a spoon.
Bake for 10-12 minutes.
Makes 2 dozen!
