Get the book Vegetarian Celebrations by Nava Atlas. The Walnut Apple Stuffing is unbelievable. My brother is the biggest omni out there, and he loves it. It also has great pumpkin turnovers instead of pumpkin pie. It needs more spice than the recipe calls for, but I'm used to lots of spices. And the cranberry relish is much better than canned cranberry sauce, even though I do miss that can look. But I'm a sucker for tradition that way. It also has a good spaghetti squash dish with peas. It's not a traditional thanksgiving dish, but my family has liked it in the past.

And everybody seemed to really like it, enough that they're letting me make it again this year. But it's awful reheated - all mushy, so eat it all fresh out of the

And cranberry sauce on top just makes it better.
