I don't know where you live and what kind of stores you have access to, but I've found vegan potstickers pre-made and frozen at Whole Foods.

Ming Ming spring rolls (frozen section) are vegan, and delicious- just bake them in the oven. I get them at Whole Foods. Most of the frozen spring rolls I have seen, all brands, are vegan.

Giant has store-brand veggie potstickers and spring rolls, which are both awesome and cheap, if you have Giant in your area.

Trader Joe's also has veggie potstickers (not always in stock though), and you can buy brand-name ones at Whole Foods also.

As for ramen: Mi Goreng has some vegan flavors and is the best freakin' ramen in the universe, but probably contains MSG. Whole Foods sells "healthy" instant noodles that are all vegan. I don't like them myself, but they'd probably suit your needs pretty well.

if you look in the tags at vegancooking, there's a whole section on potstickers. (you can do a "ctrl"+f to search quickly. it's also lumped in with dumplings)

Sadly, I cannot help you with the ramen (which I miss too!) but I do have found and tried a recipe for pot-stickers: http://www.healthyvegankitchen.com/?p=915

It includes a recipe for (whole-wheat) wrappers, in case you cannot find any vegan ones. They worked very well for me, good luck!
