I work in a bakery, and for the past 2 months we've been introducing vegan items (thanks to me!). They're selling like mad, which is great! Except that Earth Balance is hella-expensive and we're using a lot of it. Also, straight margarine is making our 'buttercream' frosting too soft. It's fine in the other products, but not frosting. There are cheaper margarines, and there's vegetable shortening, but those have partially hydrogenated oils/trans fats, and with all the trans fat legislation that's being passed, it's only a matter of time before Ohio has to stop using it too.

What I'm looking for is a vegan margarine that can be bought in bulk (20# and up at a time) that's free of hydrogenated oils/trans fat. And isn't as expensive as Earth Balance. A shortening with the same requirements would be great too, to add some stiffness to our buttercream.

Any restaurant/bakery owners out there know of anything? Thanks!
