I prefer to make my own seitan. I can make it taste however I want, and it's considerably cheaper than store bought stuff. Also, it's much more wholesome than the heavily processed chemically saturated stuff on store shelves. 5 Bucks worth nets me so so much that I have to freeze some for later use.
You can find TONS of seitan recipes through google.
This makes a kind of firm seitan "log" which is easily multiplied and frozen. the thing about seitan is that all that you really need is wheat gluten and water, then you can bake/steam/boil the resulting dough. All of the spices/flavorings can be subbed for completely different stuff, producing a totally different "style" of meat.
I also add 1/4 cup of chickpea flour to all my seitan recipes. It gives it a meatier, less rubbery texture. It also makes the seitan easy to slice paper thin.
I make my seitan in a crockpot, usually. In fact, I use my crockpot for everything. I'll probably make my crockpot seitan later this week and post it in my blog. Keep an eye out for it.http://veganbrewer.blogspot
I'm a big fan of tofurky (the actual fake turkey thing, not the other fake meats). My other favorite is gardenburger riblets. I wish gardenburger would just sell the bbq sauce that they use, I love it... I'd rather buy the bbq sauce and put it on my own seitan.

The Tofurky deli slices are pretty tasty too.
But man. Riblets. They were like, no where for months and I thought I was going to die, but then this week *boom* they're back and I got four boxes.
