Hi! I want to make the Peanut Butter Cupcakes from Vegan Cupcakes Take Over the World, but I can't for the life of me find any ground flaxseed - I trawled through a supermarket, a health food store and a green grocer tonight, and all I came up with is flaxseed oil.
I did a quick bit of research on the internets, and I figure the flaxseed is in the recipe as a sort of egg-replacer / binding agent. If so, do you think I could use some soy yoghurt as a substitute (keeping in mind how it would taste in a Peanut Butter Cupcake recipe)? Can you suggest any other substitutes? I think we have some actual "egg replacer" in the cupboard . . .
