A quick and simple Vegan Recipe book?

I recently bought Veganomicon and love it! However due to the fact that my son will be starting school soon and I will be going back to work I would like a recipe book that had simple and quick recipes that are delicious!! I find that most the recipes that are in Veganomicon are a little to time consuming for the work week but are perfect for ( Read more... )

Instead of using a cook book, I usually use Vegweb.com. (it might be .net or .org)

I recently bought veganomicon also, and it looks great, but I haven't used if for the same reason as you, it just looks too in depth for right now. Vegweb has so great, quick, easy ideas with reviews and pictures.

Quick, simple and easy...I would say La Dolce Vegan by Sarah Kramer.

But I might be biased...since I married her. :)

I was just going to rec this book until I saw you already had! I just got this and have already made 2 recipes that I love and gotten some great tips. And everything is so easy! You might be biased but you're also right. :)

For weekday nights when I'm uninspired and swear that I've forgotten how to cook, I like Student Go Vegan. The recipes are generally pretty basic (read: non-glamorous), but they also don't have a kazillion ingredients that I don't have on hand, and they're surprisingly yummy for their simplicity.
I'll bet you could pick Student Go Vegan up used on Amazon for next to nothing, too, if you shop there.

Vegan Italiano by Donna Klein has loads of delicious, quick pasta recipes and salads. Other recipes, too, but that's what I really love it for :). My omni boyfriend has stopped complaining about the lack of cheese since I started using this book.

I don't know, there's a whole "45 minutes or less" section in veg'con. I'm pretty busy during the work week, but I have 45 minutes. I love that cookbook. Good luck with whatever you end up doing.
