What are your always on hand essentials for the kitchen? including spices, appliances, dry goods, etc.

spices:
chipolte chili powder, basil, dill, mint, oregano, rosemary, tarragon, thyme, turmeric, caraway seeds, cumin, cinnamon, cloves, coriander, curry, allspice, garam masala, fennel, mustard, nutmeg, paprika, red pepper flakes, sage and saffron.

oils: olive, sesame, peanut, toasted sesame, and canola

baking: turbinado sugar, wheat flour, baking powder, cornmeal, buckwheat flour, corn starch, salt, vanilla extract, almond extract, lemon extract, earth balance shortening, dark chocolate, dates, applesauce, and oatmeal.

Vinegars: Ume Plum vinegar, apple cider vinegar, balsamic vinegar, brown rice vinegar and white vinegar.

Beans: black, canelli, garbanzo, adzuki, dark red kidney and pinto.

Grains: brown rice, quinoa, couscous and millet

In the fridge(not produce): tofu, earth balance, soymilk, tempeh, lemon hummus, Veganaise, tofutti cream cheese, spicy vegetable juice, seitan, preserves, Soy Creamer, green olives, jalepenos, Siracha, ChiliSoy paste, plum sauce, and Tamari.

Produce: baby spinach, microgreens, mushrooms, onions, avocado's, sweet potatoes, squash, eggplant, broccoli, baby carrots, apples, bananas, blueberries, ginger, oranges, and mangoes.

On my pantry shelves: veggie broth, coconut milk, pita chips, brown rice cereal, dried mango, raisins, rice noodles, peanut butter, almond butter, crackers, various Pacifica Soups in cartons.

things i truly appreciate in my kitchen: apple corer, vegetable peeler, juicer, pop corn popper, cast iron skillet, baking sheets - and parchment paper!, can opener, vegetable steamer, and a wok

these things are ALWAYS on hand at my house. i'm always looking to expand. what are some essentials you have all the time, or just can't live without?
