Going for a birthday girl's night out at Flat Top Grill and having a waiter who was totally awesome about us all being vegan, and going the extra mile to answer any questions.  The staff not caring that we brought our own desserts.  Getting so full that we could not even eat our desserts, and having to take them back to the house with us.

Do you have the recipe for the Chocolate Mint Mousse pie?

i sort of just played it by ear. i put a container of tofutti cream cheese, a container of silken extra firm tofu, and a few shakes of sugar with about 2 teaspoons of mint extract into a food processor, adding little teeny splashes of soymilk here and there while it was going, just to get things moving a bit. then i added a bag and a half of guittard chocolate chips (melted) and finished blending. i made a cookie crust on the bottom of a glass pan out of peppermint joe joe's (trader joes' peppermint sandwich cookies) that were crushed up with a bit of soymilk and melted margarine to hold it all together.

during the food processing part, i set aside some of the mixture that had no chocolate added to it and put a few drops of green food coloring in. after i poured the main mousse part into the pan, i marbled in the green minty stuff.

so basically i put a bunch of tasty shit together and blended the dickens out of it. it was gooood!

for dinner i had brown rice with spinach and brussels sprouts and mushroom and edamame and seitan and onions and scallions and i dont remember what else, stif-fried (on a special, freshly cleaned grill) in a korean bbq-ginger sauce. it was gooo-ood!
