For my birthday, my friend mailed me a vegan cookie giftbasket. It was delicious and very thoughtful! She got it from sunflourbaking.com

Personally, I like Liz Lovely vegan cookies more though. I don't know if they have gift baskets.

That's a lovely suggestion I might take up with someone else, actually! I bake for the boyfriend and his friends every weekend, so to him it might not be anything special. It's something I can do for my roomie, though!!

I was going to say a basket, something along those lines filled with vegan cookies and such. There are a ton of really go recipies on vegweb.com for all sorts of stuff and it's cute and thought-ful. Make him a card, or give him a gift certificate to a local thrift store if he's into that. Good luck!

How about making up your own hamper of vegan goodies/products? You could create a little picnic for you both (probably indoors since i'm guessing it's cold where you live!!)
A book on vegan cooking?
As somebody else said, a food processor/juicer?
Or since he's a vegan i'm guessing he likes animals, so you could donate to a charity in his name?

Well, we invested in a great food processor together a few months ago (which is my best friend... we named it Cheney because it destroys things)
I've gotten him five or six vegan cooking books already
Donating is a good idea... I'm just wondering, since I'm poor, what would be a good charity to donate to - Most of them have some sort of requirement
