Hi, do any of you know of like, a blend of gluten free flours that would be good in cupcakes? I'm making gluten free cupcakes for some relatives, I've got Vegan Cupcakes Take Over The World, and it calls for a good blend of a few flours:
tapioca, almond/corn (they say to use either of these) , white rice, and quinoa
I won't be making gluten free cupcakes much again, and I don't really feel like buying a s***load of flour that I'm never going to use again. Can you get these flours in bulk at a health food store? Or is there a place I can get a blend of them? What brand, if so? I don't want anything for baking bread, because they say to definitely not use those.
