Alright, so I'm not vegan, but I've been a member here for awhile because you all are so smart :)  It's come to my attention that I am going to have to do a dairy-free challenge.  Now I have the resources as to what to look for on labels and such, but my question is:  is there a good substitute for animal milk in cooking?  I don't like drinking cow's milk straight so I'm not worried about that.  I'm not all that familiar with the options, although soy may not be an option for the same reasons I'm having to go dairy-free.  You guys seem to be the most knowledgable about this stuff, so I hope I haven't offended by asking here.
