Why do they have to put cheese on everything?

I've signed up to participate in the MS 150. Essentially you ride your bike 150 miles over two days in order to support the National MS Society. In order to participate, you have to raise $200 for the organization. I've already spoken to the coordinator to make sure that I could earmark my donations so that they do not go toward animal testing. But he's giving me a hard time about the menu at the banquet.

Here's what I asked him:
"When I registered, I was asked if I was vegetarian. I'm assuming that this means that there will be vegetarian options at the banquet, which is awesome!! My question is: will there also be vegan options?"

To which he responded:
"We will have vegetarian options, but not vegan. We just aren't equipped to handle that. I would recommend bringing some vegan snacks with you."

I replied with a rather curt response about how I've survived many a banquet on microwave dinners, but really...Do you think there is anything I can do?

I can't imagine that a professional kitchen isn't "equipped" to boil pasta. I'm getting more of a feeling that they just don't want to deal with me. Considering the number of people who participate in this event, I'm sure that I'm not the only vegan. Besides, the event isn't until APRIL, so he's got plenty of time to figure out how to make spaghetti.
