Hi! I've been Vegan for only 4 days now but I feel so healthy ALREADY and I can't imagine ever going back to meat or dairy. So far I have just been eating fruits, vegetables, grains and nuts but I really want to try making tofu. I have lots of wonderful recipes to choose from but I have a few questions about tofu:

1) Which is better for baking and stir fry? firm or extra firm.
2) Does it taste better if it is frozen before it is pressed and if so how long should it be frozen?
3) How long should it be pressed and with how much weight? should it be wrapped in paper towels and put in a collander or is there a better way?
4) Should tofu always be pressed? When should it not?
