Is the yogurt beverage much thicker than soymilk, though?
I don't have access to the soy yogurt beverage, but if it's thicker than soymilk I'll substitute coconut milk or strawberry soy yogurt. If the beverage is thin, I'll substitute with strawberry soymilk.
It's not really much thicker, it's more for the flavor than the texture. The recipe calls for soymilk, but I use that because I like it better. You could probably just mix a little bit of yogurt with soymilk and get the same results that I like.
Do it. I'm a cupcake connisseur, and these are the best ones I've ever had. They were so moist and fluffy, I ate 6 of them in one night (and then another two for breakfast). I swear if I keep it up I'm going to get diabetes.

Heh, I don't blame you, they look gorgeous. Just eat a carrot or something for every cupcake you have - maybe they'll cancel each other out? (I wish it worked that way!)
