coconut and avacado...

So I found a few links in regards to coconut cream, which can be whipped similar to dairy cream. However, due to the fact that coconut is not exactly low in fat, I was a tad concerned. However I did find an interesting site on coconut oil (which would be in the cream)
I'm guessing this is better than cool whip ? Does anybody else use coconut cream as whipping cream ?

I'm wondering if there are any recipes for making vegan cheese that consist mainly of avacado, it seems to have a solid enough and high enough fat content that it might work as a semi hard cheese .

any help would be useful .
