Ugh, so sorry for your trials! My DH has Crohn's and I know what a rollercoaster that can be. I'm fortunately that he's relatively well controlled with meds, but we still have days, believe me.
The DH doesn't seem to have issues with nut butters as long as they are smooth. Anything with nut/seed pieces is right out. Honestly, when he has a bad day but is still hungry, peanut butter sandwiches are a go to, or peanut butter and crackers.
Our diet tends to look a lot like the above, especially with the pasta and potato based meals. He can't do the skins on a baked potato, so we generally try to make shepherd's pie or something like that with a well cooked stew under it. Beans are a no-no for both of us in large quantities so we tend to save those for our Mexican meals.
Have you ever made pot pies? I would put a gluten free biscuit on the top (the recipes I've tried for friends seem to be pretty successful), maybe even a biscuit with sweet potato or something to add some nutrition. You wouldn't have to make it very "saucy" if she doesn't like sauce, more like a veggie bake with biscuit on top.
I think mostly we find that we don't vary the TYPES of foods we eat so much as presentation, hence the pot/shepherd pies, or different spice mixes for a stir fry (it doesn't have to be Asian...we love African spice combos like cumin/cinnamon/salt/sugar/spicy and things like that). I browse a lot of recipe sites not necessarily for specific recipes but for taste combos I can try.
Good luck and I hope your partner finds some relief from her Crohn's. If she can get into remission, life becomes VERY close to normal in comparison to during a flare.
