I think they may be a bit sweeter smaller. Don't take my word for it though, as I'm not certain if that's universal or me. I love pattypan squash though, and been hoping to find some in the store. I steam them whole and eat them that way.

I suppose I haven't got anything to lose by harvesting them smaller! I've seen pictures on the internets where it looks like they are so small that they much have been harvested pre-fertilization! Hm!

Different varieties are at their peak at different sizes. Definitely follow the instructions of your seed packet/plant tag.

Man, 2-3 inches seems so small! I feel guilty! Poor little squashes! They never knew life!

I suppose I'll get over it if they are tastier. ;-)

My MIL says they're sweeter smaller, too. When squashes get too big, I shred em and turn them into muffins or bread. Once I made waffles. Basically I substitute em for pumpkin or squash in recipes.

You could bread and broil slices a la low fat eggplant parm, too, with lots of pasta sauce.

Ooooooh, that's a good idea. I'm not a huge eggplant fan (I'll eat it, but given an option would eat just about any other vegetable instead) so that sounds like a good sub! I think my husband may be skeptical of "eggplant" parm with no parm though...

Do you like and have access to daiya cheese? Or use shaky nutritional yeast and walnuts faux parm?

You know, daiya is pretty good, and I could get it, but I dunno, I'm just not that into fake cheese. Probably because I was never that into real cheese. Nutritional yeast and walnuts though, I can get behind that. ;-)

If husband really wants cheese he can find some his own damn self!
