Simple Peanut Butter Cookies

I feel like a bit odd as a Brit posting an American classic. Most of you probably have all have pre-existing favorite recipes, but these were so simple and so yum. I noticed there weren't many simple recipes under the tag, so I thought I'd post them anyway.



45 g smooth peanut butter
50 g margarine
50 g caster sugar
45 g light brown sugar
1 quantity of egg replacer
100 g plain flour
10 g baking powder
50 g unsalted peanuts, chopped

Preheat the oven to 180°C/gas 4.
Cream together the peanut butter, margarine, caster sugar and light brown sugar for 4 minutes until well-blended. Ad the egg replacer (I used no egg, so I wizzed it up thick first) and mix for a further 2 minutes. Add the flour and baking powder, then mix in the peanuts. Make into balls and press each ball lightly with a fork. Bake for 25 minutes until set. They need to cool for a while on a wire rack because of the baking powder.
