I was in Puerto Rico in January and learned about mofongo, which is made with plantains, so you could try making that.

No suggestions re: Carribean or Spanish cooking but welcome to Salem!! Not sure if you moved from another part of here but if you're completely new -- across the bridge in Beverly is a great raw/vegan restaurant called Rawbert's Organic Garden Cafe. It's about a 35min walk from where I live so probably another 10 min or so from you. :)
