Funnel cake shelf life

Hello again,
I posted here about a week ago asking for ridiculous birthday cake ideas, and I think I have made a final decision, more or less. I still have a couple questions though ( Read more... )

No experience with this, but I'd say prepare beforehand, keep cake & ice cream separate, assemble when you get home. Sounds fabulous, BTW! ;o) Maybe sprinkle something on top to look like sesame seeds (vegan white chocolate chips? Does such a thing exist?).

I was trying to think about the sesame seed thing! I was thinking about just sprinkling icing sugar and calling it a day, but white chocolate chips would be perfect! I didn't even think about that.
(And yes, they do exist!)

Love your idea! You could fry the funnel cakes earlier in the day, then refrigerate and reheat in the oven before serving. I wouldn't recommend serving fried dough cold... congealed grease does not sound good to me with ice cream. I think the contrast of hot dough with cold ice cream would only add to the appeal of your creation. And a lot of people like to let their ice cream melt before eating anyway.
