Zucchini Pasta and an Oreo Cookie Question

 So I'm stuck at home for a few days recovering from a minor surgery. That means I have plenty of time to spend poking around the internet and experimenting in the kitchen (as long as my medicine isn't making me nauseous). I made my own variation of raw zucchini pasta for me and my mom tonight.




Here's my recipe:

Ingredients:
1 Zucchini
1 Yellow Squash
1/2 Avocado
1 Tomato diced
1-2 tsp Fresh minced Basil
1 tsp minced Garlic 
S&P to taste

Slice the zucchini and yellow squash into spaghetti-like strands using whatever method you prefer (I use a simple vegetable peeler) and set aside. In a small bowl, mash the avocado with the tomato, basil, garlic, salt, and pepper. In a larger bowl, combine the zucchini and the avocado mixture. Garnish with whole basil leaves and sliced tomatoes if desired :)

Serves 2.

Now for the cookie question:

I am a sucker for oreos and even though they're vegan I'm not too fond of the ingredients. Have any of you made the recipe for Ooh La Las (vegan oreos) from Vegan Cookies Invade Your Cookie Jar? What's the verdict? Or do you have a recipe of your own for homemade oreos? I am looking for that crunchy/crispiness that the cookie part has and am less concerned about the filling.
