Gluten intolerances or coeliacs can have a huge range of symptoms and you could almost not compare people from one extreme to the other. Older people might think they are all skinny with diarrhea but that's not the case.

Mine are bloating, lethargy, brain fog, rashes, bowel pain, aches, bad blood sugar, but there's also gall bladder trouble, fatty food indigestion, thyroid issues, weak bones, diabetes, epilepsy, cancer, higher mortality rates ...

Your post made me think of this, partly because I have awful gas with just a few beans and have coeliac. I also only developed it when I was older, and an extreme dairy allergy later on. And if beano doesn't work it is likely something other than beans.

I tried an exclusion diet, going gluten free for a week, and the symptom changes were amazing. Never went back.

Nowadays, gluten free, if I don't eat too many beans I'm ok. Otherwise it's awful. Really really bad. So I'm looking into only eating fermented beans, like tempeh, miso, natto and a few others that are available in Asian supermarkets. Plus I'm experimenting with my own lactic acid fermentation, although it gets a bit stinky, but better the beans smell and not me. :)

Any questions, ask away. No one should suffer this. You'll get other suggestions, for bean preparation, but you didn't actually mention beans so that may not be the issue and rather allergies or some kind. Especially as beano doesn't work. As for beans, sprouting, fermenting, cooking and draining the cooking water all help and some say ginger and other food additives do too, but they never did for me.
