I am still mastering the art of the perfect vegan pie crust. It has been a tasty time, but I need to stop eating pie. I have one more method I would like to try; but before I spend hours in the kitchen and end up wasting ingredients, I wanted to know if anyone has ever made perfect pie crust using ONLY coconut oil/coconut butter for the fat, in it's solid (possibly even cold) form? If you have, would you mind sharing your method and recipe? I have found recipes online that use coconut oil, but they also use butter for a substantial portion of the fat which leads me to believe maybe using all coconut oil in a pie crust might not work out very well. Any tips or advice would be greatly appreciate.
