Indulgent foods + Best Soups

So hi, some of you might remember I made a post in January because I had back problems and couldn't cook my own food. 1 tbsp olive oil
1 medium onion , chopped
2 celery sticks, chopped
2 tsp ground cumin (or garam masala whichever you prefer)
a spoonful of harissa paste (option, but I REALLY like this with harissa)
600ml hot vegetable stock
400g can chopped plum tomatoes with garlic
400g can chickpeas , rinsed and drained
100g frozen broad beans
zest and juice ½ lemon
large handful coriander

Heat the oil in a large saucepan, then fry the onion and celery gently for 10 mins until softened, stirring frequently. Tip in the cumin and fry for another min.
Turn up the heat, then add the stock, tomatoes and chickpeas, plus a good grind of black pepper. Simmer for 8 mins. Throw in broad beans and lemon juice, cook for a further 2 mins. Season to taste, then top with a sprinkling of lemon zest and chopped herbs.

Some VegiDeli cubed 'chorizo' would make this into a cassoulet type thing rather than just a soup. In fact if you made the soup you could add anything to turn it into a more substantial meal. It looks like a lot of ingredients, but it's really just throwing a lot of stuff together that you'll mostly have in the store cupboard already. Only takes me about 25 mins to make it.

Thanks from me too. I've never tasted harissa, but I think it's something I need to add to my repertoire.

I wonder if I can get frozen broad beans anywhere in Washington DC. I could use limas, but I do love a good broad bean.

Love harissa, can't always get it so I love it when I can. I struggle with the frozen broad beans too but frozen stuff's great, when you've got it you've got it!
