So for any members from the Philly area, there is this awesome new vegan bakery on South St called Sweet Freedom. I've been there a few times already, and have some favorite items. The thumbprint cookies there are so good...the cupcakes and icing drool worthy...but if I keep going there I will be poor. ;__; So I became inspired to at least attempt at making one of the yummy desserts, and I'm satisfied with the result. Very sweet, and chewy thumbprint cookies. Simple, quick, and delicious. And now, I can happily say that I can save a bit of money now that I can make my own goodies. ♥
Thumbprint Cookies
1 cup almonds or pecans
1 cup rolled oats
1 cup whole wheat pastry flour
1/2 cup safflower or canola oil
1/2 cup maple syrup or agave nectar
1/4 tsp salt
Preferred flavored jam/preserves
Preheat oven to 350*F. Process almonds or pecans in a blender/food processor/coffee grinder(my weapon of choice). Place in bowl and add flour, oats and salt. Mix together and then add wet ingredients (oil and syrup). Stir mixture till it becomes dough-like. Form walnut sized balls from the dough and place on a cookie sheet lined with parchment paper. Press thumb in center to make an indentation on the surface. Fill indentation with jam. Place baking sheet in oven for 15-20 minutes. Take 'em out...and eat them. Duh. :)
