Ok, the start of a winter farm share has coincided with an existing stockpile of vegetables, and I'm feeling overwhelmed and underinspired. I'm sure some of this will wind up simply roasted or made into some sort of soup, but I'd like some other ideas (especially since I'll have 9 more weeks' worth of similar ingredients to deal with), or at the ( Read more... )

Borscht, the best soup ever, imo.

It's a simple vegetable soup, with beets at its centre. I would start with chopped onions, garlic, onions, celery, salt, pepper, dill (fresh is best, but dried is all right), then beets, potatoes and/or rutabaga, cabbage, green peas and green beans.

To serve, add a dollop of vegan sour cream and a splash of apple cider vinegar, some salt and fresh cracked pepper.

Also, it freezes really well.

The last borscht I made was thoroughly disappointing (and I like borscht). Got any tips for getting more flavor out of the vegetables? The batch I made was just really bland, but I don't think I used that many different vegetables. Maybe roasting the rutabaga and onions ahead of time would help, too...

I've never roasted the vegetables for borscht before. I tend to use lots of onion, garlic and dill. I also add canned whole tomatoes.

The version I grew up with is German, so it uses a large variety of root vegetables. And the splash of vinegar at the end also differs from the Slavic versions.

I now have an enormous pot of very tasty borscht and far fewer vegetables staring me down. Thanks for the tips! Now to make room in the freezer.

I'm so glad! It really is my favourite soup and one of the few German dishes that my mom and grandmas made that I loved as a child and continue to love as an adult, which is also easily vegan-friendly. Plus, its basis is my favourite vegetable - beets. When I saw the vegetables you had at your disposable, borscht seemed the obvious choice.
