Potato Waffles? Recipe request

My bf loves waffles. He went on a waffle kick a couple months back that led to a (very difficult to clean) waffle maker to sit on my countertop, because he was waffled out. Now he realized, there are savory waffles. Particularly striking his fancy: potato waffles

That sounds like it would be a giant waffle-y french fry. Yum!

I've never made potato pancakes before, but I've eaten a bunch, and it seems like they would have a bit of flour mixed in there.

I have an untested plan to make potato pancakes using potato flakes, maybe some arrowroot/cornstarch, a no-egg, spices and rice milk... As I said untested but I think using the flakes may work out well because you're not fighting the water in the potatoes (a fight which is normally won with eggs).
