Hello. I would like to make the 'Best Pumpkin Muffins' from Page 52 of Vegan With A Vengeance. The one problem is, I don't have the 1/2 cup of soymilk needed for the recipe. I have just about every other baking ingredient one could want.
The only type of milk at all I have on hand is a can of Thai Kitchen Lite Coconut Milk, but I worry that this might mess up the flavor. Would it?
I know this may be a long shot, but are there any substitutions for soymilk that won't mess up the recipe?
