I decided to see if I could make vegan pizza rolls tonight, and it worked! Here's the recipe:
-about 1 shredded block of vegan cheeze
-half package of vegan pepperoni, chopped (you could always omit this or use other chopped filling ingredients)
-tomato sauce
-about 2 1/4 cups of flour
-packet of yeast or 2 tbsp yeast
-pinch of sugar
-pinch salt
-1 cup water
-olive oil
Mix the flour, sugar, salt.
Put the cup of water on the stove and heat to 110F- if you don't have a thermometer like me, test the water temperature with a finger. It should be pleasantly warm.
Mix half a cup of the water with the yeast. Let it sit for a few minutes.
Add the yeast and a drizzle of olive oil (roughly 2 tbsp) to the dough and mix. Knead and add more water until the dough is smooth.
Drizzle some olive oil on the dough and allow it to rise for about an hour.
Punch the dough down and preheat the oven to 450F.
With oiled hands, take a golf-ball or larger chunk of dough and smoosh it in your hands. Sprinkle the vegan cheeze, pepperoni, and/ or other fillings in the center- don't add too much. Pinch the dough shut and place on a oiled cookie sheet.
After you've made all the rolls, let em cook for 5-10 minutes. It didn't take very long for mine to cook, since I had made the dough fairly thin.
Dip in marinara to eat :)
