I've been through the tags, and am considering making zaftigvegan's Happy Chicken Kiev, assuming I can find all the ingredients (not so easy in the rural south, let me tell ya ( Read more... )

plain seitan is nasty.
try to seitan o greatness recipe :) or the one above. which ingredients are hard to find? i feel like if you can get vital wheat gluten; you should be able to find nooch the same place.

VWG is available in 1 lb packages without too much driving. I haven't yet found nutritional yeast, though I'm currently out of state and in some semblance of civilization, so I'll shop here before I go home.

There is no asian market in under an hour drive from where I live. "Isn't all margarine vegan?" was the response I got after explaining what vegan was. The largest asian section in any grocer within reasonable distance is 3 ft of shelf, and most of it is soy sauce or La Choy. They've never heard of silken tofu. (I appreciate not all of this is in this recipe, but I hope you're getting my point.)

The town I live in doesn't have a coffee shop ... not one. I'd say I live in Mayberry, but I've been to Mayberry and they have a ton more stuff than my town.

VWG is available to me, locally, at, of all places, Walmart. It may also be carried at Food Lion, but once I found it I stopped looking.

Hmmm. With other seitan-based recipes, I would suggest trying a batch of seitan first. But! ZV's a truly brilliant and talented chef, so I think you're in good hands if you want to just jump right in to the Kiev recipe. And let us know how it turns out! I'm planning on making it for the first time next week.

The closest Whole Paycheck is *cough* 100 miles as the crow flies, in Charleston SC. I was hoping there was one in Myrtle Beach, as I can get there in 1-1.5 hrs, but Charleston is a good 2-2.5 hr drive. The next closest are in and around Raleigh NC (2.5 hr drive), where I am currently visiting. Raleigh actually has an asian market, I visited yesterday and picked up some miso and silken tofu. I'm not keen on transporting things that need refrigeration, but you do what you have to do.

Florence SC is the closest "city" (only a 45 min drive) and they have a health food store. Next time I venture in I'll have to find it. Based on it's location, I've driven past it 100 times and not seen it, so it's very new, very small or both.

Just wanted to say that I'm in South Carolina and I totally feel you on the hard to find anything vegan. Luckily I'm living in the city right now, so there is at least one health food store, but I have to stock up before I visit home because it's difficult to find stuff when I'm there... I don't know where you are but I've been able to find some vegan products at Food lion and Bi-Lo *smart balance light margarine is available at both*...

could you make vp's seitan in a smaller batch? like maybe a third of the recipe? heck you could even use it as a tester for the recipe if you can find the stuff.
i love the book, but i cut the recipes in half every time and still end up with too much food.

yeah, I'm tight on fridge/freezer space, so I if I attempt VP's seitan I'll definitely not be doing a full batch. I suspect, regardless of batch size, the first try will be an epic fail and end up in the compost anyway.
