I don't really use a recipe...I just dice a bunch of tomatoes and throw 'em in a bowl with some olive oil, garlic, basil, salt, pepper, and a little balsamic vinegar (I like the bite it gives it) and let marinate at room temp for 3-4 hours. Then drain the liquid. When I bring it to gatherings I just leave the tomato mixture in the bowl next to the Italian bread and let people serve themselves as needed so it doesn't get soggy.

Mmmm, if you're having garlic and tomato bruschetta you should make a pot of balsamic reduction to drizzle on it when you arrive and some fresh basil leaves to pop on the top before serving.

I also love sun-dried tomarto and oyster mushroom tartlets. With a hugh baby spinach and watercress salad.
