Apple Pumpkin Muffins - egg replacer?

Oct 09, 2009 15:21

I have this recipe for Apple Pumpkin muffins that sounds absolutely amazing, but it calls for two eggs. Normally, I'd be relying on my tried and true applesauce as the egg replacement, BUT...this recipe already calls for 1/2 cup of applesauce.

I was going to use the flax seed egg replacer, but then read that it might give a particularly strong taste to the muffins, and I don't want that. After some searching, I fould that soy yogurt can be used as an egg replacer. Super! Except...I try to limit soy as much as I can. So my question is...

Is it possible to use vanilla flavored coconut milk yogurt (So Delicious brand, to be exact)? It has the same consistency, but I'm just looking to the experts to confirm that this would be a good option.

Thanks!
