Sweet potato chili

This is a recipe I found on the food network that I now make all the time.

Sweet Potato and Black Bean Chili

It's been kind of an evolution. The first time I made it I followed the recipe to the letter, but I've made it so many times now I obviously don't look at it anymore. When I went to email the recipe to a friend I was like, "This recipe calls for lime juice?! I'm supposed to add water?! Who knew?"

Sweet potatoes and black beans go so well together! I wish my husband would eat sweet potatoes but he won't. :(

Really? I used to not eat them too, but only because I was only familiar with the syrupy sweet dish my mom made at Thanksgiving.

I seriously thought they were disgusting, but now they're a staple. Sweet potato fries might be another good introductory dish.
