Vegan (Blueberry) Pancakes

Found this super easy pancake recipe after I googled online for a few minutes (http://www.recipezaar.com/5-Minute-Vegan-Pancakes-132263). I added a few touches of my own.

Ingredients:
1 cup flour
1 tablespoon sugar
2 teaspoon baking powder
1/8 teaspoon salt
1 cup soy milk
2 tablespoon vegetable oil
1 teaspoon vanilla extract
blueberries (or fruit of choice)
powdered sugar and cinnamon (or topping of choice)

Instructions:

heat a skillet/pan over medium heat.
mix dry ingredients (first four) together in a bowl.
add the milk, oil, and vanilla extract-- mix well.
pour the batter into the skillet, to make pancakes as large as you want.
drop some blueberries into the cooking pancake, then drizzle a little more batter over the blueberries to cover them.
once the pancakes start to bubble, then the bubbles pop, you should be able to flip it to cook the other side.
if it doesn't look done, just flip it back and cook it a little longer. do this on both sides until it looks golden brown.
sprinkle some powdered sugar and cinnamon (or whatever you like) on top.
