So I had a half of a leftover can of both corn and black beans, and whipped this together.
It would probably be just as tasty cold, but I made mine hot.
Ingredients:
half can corn
half can black beans
10-15 cherry tomatoes, halved (I used less than this, but suggest using this amount or more)
about 2 tspn cumin (totally estimated, I just threw several pinches in, but I love cumin, so adjust to taste)
Drain beans. Drain most of the corn.
Throw both in a saucepan over high heat until the water starts to evaporate.
Toss in cherry tomatoes.
Mix in cumin.
Stir and let cook for 5-10 minutes or until most of the liquid is evaporated.
Its done before it starts to burn!
I also added some black pepper and onion powder after I was done cooking this. Play with spices and maybe even juices!
