Substitute for Ener-G?

Hey, all. I'm interested in making these pancakes from Vegan Yum Yum but I don't do Ener-g egg replacer. I 've never found it necessary, and I've generally just passed over recipes that called for it. But I really want to make these! What could I substitute? I could certainly use flax, I have tons of that. I also have applesauce and bananas at my ( Read more... )

I don't think it would make any difference to leave it out... I never put any egg replacer in my pancakes, and in this case it isn't needed for rising because the yeast will do that.

I agree with this comment.

But if you really want to add something, I'd go with the potato starch.

do the potato starch w/ some baking powder (you need something for the leavening aspect) or do the flax.

personally, i spent a long time avoiding buying ener-G, but even though it's $5 or 6 a box, it has like a hundred servings and I've just found it to be a handy thing to have around in the cupboard.

I always substitute flax when a recipe calls for Ener-G. It seems like it should work in this recipe.

I made these exact pancakes last weekend and used flax in them....they came out wonderful....I hate ener-g egg too.

you don't need it :) you can either replace it with cornstarch or just leave it out; the yeast makes these rise.
