This soup was so easy and SO good - especially reheated on the second day after all the flavors had melded together in the fridge overnight. It's very similar to Olive Garden's version of the soup and, in my opinion, even better.

.... *drooooools* how i wish i could be cooking my own meals now. i have been living at a camp, so i have to eat the vegan stuff they cook me. most of the time its pretty good. today they apparently thought that peas, corn and cauliflower would suffice for my dinner. *cries*
At work, we have a monthly staff meeting where lunch is catered. Of the fifty or so people in attendance, two are pescotarians and then there's me. Some months I get really great stuff--my favourite so far has been stuffed acorn squash--but other months I've gotten things like steamed broccoli on rice, smothered in canned tomato sauce.
