Here's what I had for dinner tonight: spicy, savory soup with corn, potatoes, and beans. It turned out really, really well - my non-vegan brother ate a bowl and liked it, which was a big surprise. I was going to serve it with the scallion flatbread from Veganomicon (I have a ton of scallions to get rid of), but then I got lazy. Maybe that will be lunch tomorrow, and I can find out how this tastes as leftovers...
Ingredients:
minced garlic
chopped onion
curry paste
crushed red pepper
3-4 cups broth, or water and bouillon (I used vegan "chicken" bouillon because it was the only thing in the house)
1 can corn kernels
1 can cannellini
1 red potato, unpeeled but chopped
Sautee minced garlic and chopped onion in olive oil for a minute. Add chili paste and crushed red pepper to taste, and sautee for another minute. Add broth, or water and bouillon; throw in corn kernels, beans, and potato. Heat to boiling, then simmer for half an hour. Optionally, put some scallions on top to make it look pretty.
