Fried Tomatoes!
Buy, beg, or barter the most real tomato you can find. Scout out your neighbors' backyards and trade cookies and carwashing to those clever enough to grow their own. Visit a farmer's market, or drop some dough at a nose-in-the-air food store. This recipe is wonderful with real tomatoes, and not so wonderful without.
For 1 large or 2 medium tomatoes...
2 Tbsp fine cornmeal
1 Tbsp flour
1 Tbsp powdered nutritional yeast (just add more or crumble for flakes)
1 tsp salt
Lots of fresh pepper
Spices (italian seasoning, some cumin/tumeric/paprika, whatever you're going for)
Milk of some kind (I used almond)
Cut the tomatoes cross-wise into thick, meaty slices. Mix all the dry ingredients in one shallow bowl, and pour some milk into the other boil. Meanwhile, heat a frying pan up to gently sizzling medium with an oil of your choice.
Dredge the tomatoes liberally in the cornmeal mixture, then through the almond milk, then back through the cornmeal mixture.
Fry on each side for five minutes, flipping very carefully.
Enjoy with a steak knife and a napkin in your lap!
