Quick and Easy Veggie Melt

A very simple, fast and healthy recipe for when you just don't feel like cooking. I don't know about you, but I'm not a huge fan of the veggie burgers that try to taste like the real thing. I like California veggie burgers, which are usually made with real vegetables instead of imitation beef. Dr. Praeger's is my brand of choice. They aren't as much a "burger" as they are a veggie patty. They're very natural and fresh-tasting, made only with mixed vegetables and some binding agents. Makes a great lunch!

Serves 1

Ingredients:
1 Dr. Praeger's frozen California Veggie Burger
1 tbsp canola oil
1 slice multi-grain bread (or a bread of your choice, I just prefer multi-grain)
1 slice vegan cheese
A handful of baby spinach
1 slice of tomato

How to make:
1. Heat canola oil in a small pan on medium-high heat.
2. Cook veggie burger, flipping constantly. You can tell if it's done or not by making a small cut in the middle to feel if it's warm or not.
3. Once the burger is cook thoroughly, remove from pan.
4. Top your slice of bread first with the baby spinach, next with the cooked burger, then the slice of tomato and finally with a large slice of cheese.
5. Pop the entire thing in a toaster oven until the cheese is melted and the bread is browned.
6. Enjoy! Since it's open-face, I eat it with a knife and fork instead of picking it up.

Pair it with a cup of sliced fruit for something sweet or a handful of nuts for protein. A vegetarian meal doesn't get much easier than this!

Note: As far as I can tell, these burgers are vegan. A full list of ingredients can be found on the website I provided above. Dr. Praeger's also makes a gluten-free version for those with celiac or who prefer to stay away from gluten.
