Desserts: Oatmeal-Chocolate Chip(or raisin) Banana Cookies, Coconut Macaroons, Choc. PB+ Tofu pie

Desserts I made this weekend. All super easy and delicious!

Coconut Macaroons
2 cups shredded sweetened coconut
1 cup soy milk
1/4cup sugar
2 tbsp flour
1 tsp vanilla
1/4 tsp salt

STEPS
1) Preheat oven to 350
2) bring  soymilk + sugar + salt for aprox to boil
3) lower heat and stir often for about 5 minutes til mixture is slightly thinner than pudding
4) add flour + vanilla
5) mix with coconut
6) spoon onto cookie sheet
7) bake til golden/aprox 15 minutes

options: I also added nuts to a second batch

Oatmeal-Chocolate Chip-Banana Cookies
1 cup margarine, cold
1 1/2 cups brown sugar
1 cup sugar
1 ripe, mashed banana
4tsp vanilla
2 tbsp Soy milk
2 cups flour
1 tsp baking powder stirred into the flour
2 1/2 cups rolled oats (quick oats work well)
2 1/2 cups vegan chocolate chips (check the bag for milkfat!)
OR RAISINS

STEPS
1)Preheat oven to 375 degrees
2) Mix together the margarine and sugars very well
3) Add the well-mashed banana and mix well
4) add vanilla and soy milk
5) add the dry ingredients, in the order above, bit by bit (say, by half-cup increments).

The final batter should be fairly dry
Bake aprox 10 minutes
Let cool
(they taste best the day after)

Chocolate Peanut Butter Tofu pie: (tastes like a french silk pie)
1 container tofu, silken or firm (approx 12 oz)
1/2 cup chocolate chips (check the ingredients)
1/2 cup peanut butter
2 tbsp soy milk
1 pre-cooked pie crust (check the ingredients or make your own)

STEPS
1) Melt the chocolate chips
2)blend together the peanut butter, silken tofu, chocolate and soy milk in blender until smooth and creamy, adding a bit more soy milk if necessary.
3)Pour into pie crust and refrigerate until firm, at least one hour.
