So, I have a pile of cookbooks and couldn't remember which one I used the last time I made falafel. I started making it from the Moosewood cookbook and was half way through before I noticed the +3 eggs instruction!
So, now I have blended:
4 Cups of chickpeas, garlic, cumin, tumeric, cilantro, parsley, tahini, and some lemon juice. I tried frying up a few balls of falafel without the eggs and they're a mushy mess; they fell apart in the pan.
Is there anything I can do to save this mush, or do I have to throw it away and start over?
