Getting rid of butter

So I would like to get rid of my vegan margarine, so that no matter where I travel, I can bake.  What would I use in cookies, etc., instead of the butter?

When I'm making cake and don't have margarine, I usually replace it with sunflower oil, but I take a bit less than I would take margarine. It makes the cake softer in consistency, though.

depending on the recipe, applesauce/plum butter is used as the binding agent.
