I have been searching for an interesting Christmas menu and I haven't had much luck. Are there any favorite and delicious dishes that anyone has cooked or seen that may be of help? Thanks!
I would also check the tags for other holidays - Thanksgiving, Easter, etc. (Especially Thanksgiving - this year there were a lot of posts that garnered great recipes in the comments) Do you have something particular in mind? Something that was traditional in your family that you're seeking to replicate?
Here's what my mom always makes for Christmas dinner: Middle Eastern Rice with Lentils (from the Vegetarian Times cookbook)
1/2 medium onion, chopped 1 T vegetable oil 1 cup uncooked brown rice 1 T low-sodium tomato paste 2 1/2 c. water 1/4 tsp. ground cinnamon 1/4 c. dry lentils 1 tsp. salt 1/2 c. raisins 1/2 c. pine nuts (it says toasted, but I don't think we ever have) Additional water if needed
In a large saucepan, cook the onion in oil, stirring, until soft, over medium heat. Add the rice and stir for several minutes. Combine the tomato paste with the water and cinnamon. Add to the rice, along with the lentils. Bring to a boil, cover, and lower the heat. Simmer for 30 minutes.
Preheat the oven to 350 F.
Stir the salt, raisins, and pine nuts into the rice mixture. The mixture should be a little watery; add 1/4 c. water if it is dry. Place the mixture in a greased 2 1/2 quart baking dish. Cover and bake for 20-30 minutes.
For Thanksgiving this year, I made hot-sauce glazed tempeh as the main course. super yum! and very interesting. :)
Thanks! The thing is we are cooking for my bf's parents and they like alot of traditional English dishes so I was looking for something that wasn't roasted veg again. Something to make it a noticable holiday, every time they are over we have what they like/are familiar with, roasted veg and veggie sausages. I'll def run this one by him, it sounds awsome.
