Help with Baked seitan

Ok for thanksgiving I would like to take a rolled out piece of seitan and layer portabella mushrooms roll it up to a log shape and bake it. How ever I have never baked seitan (I always use the pressure cooker). Can any one give me tips on how to bake seitan (please I beg you ( Read more... )

i used to make a savoury seitan strudel every year - it kept the seitan from drying out and looked great:

frozen phyllo dough - stuff with strips of seitan (i used storebought 'chikken' flavour) layered with herbed fat (earthbalance would be good), and then stuffing on top. it sliced up like a 'roast' and was great with mushroom gravy and cranberry!

Your menu sounds great! But if you're cooking for an omni family, I'm not sure how the deviled 'eggs' would go over...

I have actually have done the deviled eggs before and they love them. My hubby’s family is Cuban and is very open to vegan food. In fact the grandmother and sister have cut back on their meat consumption and now eat tofu once a week. Both now drink soy milk and use smart balance light (vegan) and the only cheese that the grandmother uses are from her husband’s friend’s small farm. Hey at least is a start.

wow, that's more than just a start, i think it's really great!

What with the "is this a decent thanksgiving menu?", my reply is: where do you live and can i come over? I mean, i'm from holland, we don't do thanksgiving, but this sounds like a party i wanna be at! :)

I rolled mine up with Miso and mushrooms, boiled in mushroom soup for about 30 minutes, then baked for about 30 minutes.
