orange scones--tips?

hi there! i have been making plain scones from *The Joy of Vegan Baking* and I would like to adapt the recipe to make orange poppy seed scones. I've been using the chocolate chip scone recipe, minus the chocolate chips, and the scones have been great. I'm just not sure how much orange zest and/or juice I should add to the mix. i am a disaster ( Read more... )

I would say 2-4 tbs

That sounds like it could be too much, especially if the zest is fresh. I'd start with much less (the half-orange suggestion below looks good) and be ready to add more if a taste of the dough doesn't have the oomph you want.

Zest, you can add however much or little you like. I'd say start with half an orange worth, and see how that tastes. As for juice, you don't necessarily have to use any if you already have the zest in there, but if you like, replace 2 or 3 tbsp. of whatever liquid is called for with orange juice. Good luck! I think I remember it calling for some extract. If I'm wrong disregard this, but otherwise, you could use orange extract in place of what the other extract (I think vanilla?) it calls for.
