I have a pal who benefits from eating a Low-GI diet, so I'd like to learn some delicious recipes that are good for people who must eat low-GI foods. I really wanted to make something with pumpkin, but its Glycemic Index number is pretty high, so I'm not sure what to do about that.
Anyone? Favorite Low-GI snacks, recipes, desserts (?) and...holiday foods? Or any blogs/websites that have recipes would be good, too. At this point I'm nervous about doing anything too on-my-own or from my own tweaked recipes, in case I overlook something and make a mistake.
