Vegan, Soy-Free, Banana-Free, Alcohol-Free Egg Nog?

Is this even possible?  I'm intolerant to soy, don't consume alcohol, and have another soy-intolerant friend who is allergic to bananas, so I'd like to find a recipe for vegan egg-nog that would work with those restrictions.  I've never made any kind of egg nog from scratch before, so I'm not sure really what the best ingredients to try are.  ( Read more... )

This recipe is in the new VegNews:

Holiday Nog
serves 4 to 6

1 cup cashews
1/2 cup dates
1/2 vanilla bean, split and scraped or 1/2 TBS. vanilla extract
1 tsp. grated nutmeg
3 cups water

Blend all ingredients in blender until smooth. Serve and enjoy!

If you look up recipes on raw sites, they should have a bunch of nog options that have what you need. I know that the above recipe is Ani Phyo's. I suppose you could just heat it if you want it warm.

Also, agave nectar is a great substitution for the dates in that recipe!

Um, I'm not sure how to make a rice nog, (rice is the first thing I thought of) but I found a consumable by Amazaki: http://www.grainaissance.com/ricenog.html. The ingredients are below:

Rice Nog: Cultured organic rice (filtered water, organic brown rice, rice koji), almonds, raisin syrup, xanthan gum, natural flavors (no MSG), spices, sea salt.

Maybe you can determine an estimate for each of the possible ingredients? I'd say that the 'natrual flavors and spices' are just going to be cinnamon, nutmeg, maybe some maple sweetener or agave. Also, I'd say pre-soaked cashews would create a richer flavor and make the drink thicker--but I've always had terrible luck with cornstarch and arrowroot.

ew frozen banana? i would not want my nog to taste like bananas, and i love bananas.

i'd suggest some nice thick rich almond milk, nutmeg, cinnamon, etc... starting there. maybe some rice dream ice cream blended in for some richness/thickness.

I think I'd go with vanilla rice milk, melted vanilla rice dream, and then nutmeg and sugar to taste, with perhaps a few drops of rum flavor extract.

as an alternative holiday beverage, rice dream has got this delicious chocolate chai ricemilk. the flavor is actually nothing like chocolate or chai... i would say it's probably closer to pumpkin pie.

The recipe I use calls for a 1/4 cup of vanilla pudding mix (for four cups of milk) to thicken it. If you can find vegan vanilla pudding mix (and I have a feeling that this should be really easy...) and some rice milk or almond milk or what-have-you, then you should be fine! Just throw it all in a blender with a dash of cinnamon and nutmeg, and blend it until it gets nice and frothy. Yummm.
